JADALNIA WARSZAWA WALK #2We had so much fun last week on our first walk, that before we’ve even documented it properly, we want to do it again. So, although it’s a bit late notice, please join us TOMORROW, Sunday 19.05, at 12.00 at the PKP Służewiec bus stop (north side). We’ll walk along the tracks and end up on Gimnastyczna street for some sweets, homemade jam and wild tea (black currant, mint). We started the journey on a sidewalk of magic carpets.

Under our feet, a strange patch of red. Amaranth, perhaps? It seems to me somebody might have spilled her groceries here, but how many people actually eat amaranth seeds?

Behind a mass of growth looms a mysterious house, one of three pre-war houses in Rakowiec. This was and shall be known as My Dream House.

Before we even start walking, The Usual Suspects present themselves: Ground Ivy, Ground Elder, Chickweed, Grapes, Clover, Nettles, Dead Nettles. There will be more of these suspects later. I notice a strange red bamboo-like plant which I know now is called Japanese Knotweed, an invasive plant that came to Europe in the 19th century. I’m sad that it’s not real bamboo.

Jadalnia Warszawa #1: Warm-up walk SUNDAY MAY 12 @ 12

JADALNIA WARSZAWA

We kindly invite you to help us launch a long-term project to create an alternative map of  Warsaw (in particular Ochota and Mokotów), focusing on its edible plants and trees, soil health, as well as on how public space is used for marginal human and animal activity. On this first walk we’ll experiment with methods of data collection and help identify the most edible/useful plants and trees one can find in Warsaw.

WHERE TO MEET:
The walk will start here, near where Żwirki i Wigury crosses the railroad tracks (the address is approximately 25 Żwirki i Wigury) between Ochota and Mokotów. We will walk here on the path (Mikołaja Drigały) towards Grójecka. After the walk, we’ll go to Pixxe’s garden and drink teas made from black currant leaves, and taste some homemade elderflower cordials and wine.

The walk starts at NOON on Sunday, May 12. It will last between 2-3 hours and is approximately 1.6 km. Please call 796 532 208 if you need to locate the group after the walk has begun.

WHAT TO BRING:
Paper, pencil, smart phone, camera, video camera.

JADALNIA WARSZAWA (Warsaw Canteen) is an exploratory map-making project to investigate and mark sites for wild food, fruits, bioindicators, and the traces of land use by humans and animals as a means to understand and assess the health of our city. It is a long-term project originated and implemented by Jodie Baltazar and Paulina Jeziorek and consists of a series of urban walks/hikes which take place from May until October 2013.

We use all means of data collection: marking directly on paper copies of maps, adding date through mobile phones to google.pl and fallingfruit.org, recording media information, such as audio, photographs, video etc. As the project progresses, we will store information on a website and develop new ways we to present the information/images as the project progresses.

The aim of walks will be:

Mapping the Neighborhood: Exploration of urban space; creating maps of urban food crops such as fruit trees and shrubs, edible flowers, herbs, medicinal plants, and plants used for dyeing fabrics. By identifying specific plants that grow on the land, we can assess the type and health of soil. We also collect information on unoccupied buildings, abandoned plots, as wells as temporary structures and signs and traces of consumption and human subsistence activity (trash, eating, fires).

Monitoring of soil: While walking, we will collect soil samples from selected sites and transmit it to the laboratory. We may also conduct other tests of the soil as to its structure and composition. In this way we will be able to assess which of the sites are suitable for harvesting crops. The data will be used to scrutinize the stereotypes about growing food in the city as well as urban consumption of edible plants.

On Sept 19, 2012 I held a jam-making party in the local park as part of the M4 Rakowiec community action project organized by the great people at Odblokuj. We made jam from wild elderberries, wild grapes and Antonówki apples from the garden. Wild fruits of Rakowiec! There were some really sweet old ladies there, but sadly I didn’t get any photos of them.

We will also discuss and demonstrate how to safely compost your waste, as well as other extreme waste such as meat, fat, and dairy products, through thermophilic composting into nutritious, life-supporting soil. This is a guided walk through

PIXXE—Projects for the Experimental Exploration of the Environment (pol. Experymentalny Projekt Odkrywania Środowiska)—ogłasza SOIL GARDEN PROJECT, czyli projekt kultywacji gleby z miejskich odpadów. Projekt zostanie zrealizowany przez NANCE KLEHM, eko-projektantkę z Chicago i JODIE BALTAZAR, artystkę mieszkającą w Warszawie.

Od piątku 17 sierpnia do poniedziałku 20 sierpnia będziemy zbierać i kompostować organiczne odpady takie jak resztki jedzenia, fusy kawy, kartony i ścinki trawnikowe, oraz prowadzić na ten temat warsztaty. Odpady będą zbierane na targowiskach i od mieszkańców Ochoty (Rakowiec i Szczęśliwice), a następnie kompostowane na Ogrodzie Pixxe przy ulicy Racławickiej.

Zapraszamy Was każdego ranka od 9:00 do 13:00 by pomóc w zbiórce i przetwarzaniu odpadów! Rękawiczki i narzędzia będą na miejscu, ale zachęcamy do założenia grubego obuwia i odzieży.

Popołudniami między 15.00-17.00 będą odbywały się warsztaty poświęcone: kompostowaniu, budowie kompostujących toalet, oraz rozpoznawania i zbierania roślin jadalnych i leczniczych w mieście. Warsztaty poprowadzi Nance Klehm.

Zbieranie i przetwarzanie odpadów organicznych są darmowe. Sugerowana cena za udział w warsztatach to 30PLN (więcej jeśli możesz, mniej jeśli to za drogo, za darmo jeśli nie masz żadnych pieniędzy). Wszystkie odbędą się w języku angielskim, ale warsztaty będą tłumaczone na polski.

Nance Klehm

Projektantka systemów ekologicznych NANCE KLEHM angażuje miejscowych mieszkańców do tworzenia zdrowego środowiska i rozpowszechniania holistycznego, systematycznego myślenia o otoczeniu poprzez tworzenie i utrzymywanie kolaboratywnych, długoterminowych i interaktywnych eko-projektów sąsiedzkich. Jej praca przedefiniowała sposób, w jaki ludzie współistnieją z systemami roślinno-zwierzęcymi w otoczeniu miejskim. Nance tworzyła projekty dla Muzeum Sztuki Współczesnej w Chicago, Muzeum Historii Naturalnej Fielda, Centrum Interpretacji Lądu w Los Angeles, Jadalnego Podwórka Szkolnego w Berkley, Learning Site w Kopenhadze, Kanadyjskiego Centrum Architektury w Montrealu, Darlington College of Arts (Wielka Brytania), Jutland Kunstakademi (Dania), Machine Projekt (Los Angeles), City Repair (Portland) i mnóstwa grup społecznych.

Jodie Baltazar

JODIE BALTAZAR zajmuje się głównie filmem i animacją, ale jej działalność artystyczna obejmuje takie dyscypliny jak muzyka i performance, rzemiosło i sztuka środowiskowa. Jej praca bada, jak elementy otoczenia wpływają na siebie i wzajemnie się kontrolują. Fundacja PIXXE, założona przez Jodie w 2011 roku, usiłuje przemienić publiczną lub zaniedbaną przestrzeń w obszar społecznie użyteczny, odnosząc się do takich zagadnień jak produkja żywności, podział miedzy miastem a wsią, społeczeństwo obywatelskie i użytkowanie gruntów. Jodie otrzymała dyplom Magistra Sztuki na Uniwersytecie Południowej Kalifornii (USC) w 2008 i uzyskała stypendium Fulbrighta do Polski w 2010. W 2011 otrzymała stypendium CEC Artslink Project na nakręcenie filmu dokumentalnego o dwóch braciach na polskiej wsi, którzy zmagają się z zaadoptowaniem do nowych ekonomicznych i ekologicznych paradygmatów.

Soil Garden Project – Information (English)

Soil GardenPOLSKI TUTAJ

PIXXE—Projects for the Experimental Exploration of the Environment (pol. Experymentalny Projekt Odkrywania Środowiska)—announces the SOIL GARDEN PROJECT, a project to cultivate soil from city waste. It will be conducted by NANCE KLEHM, an ecosystems designer from Chicago, and JODIE BALTAZAR, an artist living in Warsaw.

From Friday August 17 to Monday August 20 we will be collecting and composting organic waste such as food scraps, coffee grounds, cardboard, and yard trimmings as well as holding educational workshops on the topic. The waste will be collected from markets and residents located in the Warsaw neighborhood of Ochota (Rakowiec and Szczęśliwice) and then composted at the Pixxe Garden on Racławica.

We invite you every morning from 9.00-13.00 to collect and process waste. Gloves and tools will be provided, but it is recommended to wear waste-proof foot ware and clothing. In the afternoons from 15.00-17.00, WORKSHOPS on soil and composting, dry toileting, and urban foraging will be conducted by Nance Klehm.

Waste processing and collection is free, but workshops have a recommended donation of 30PLN (more if you have it, less if you don’t, free if you’re broke). All activities and workshops will be conducted in English, but some Polish translation will be available (like for the workshops).

How to get there: The event will take place at the PIXXE GARDEN located at GPS 52.198990, 20.967910. Entrance is on ul. Racławica, 100m east of Grójecka. Take Tram 7, 9,or 15 to Korotynskiego. Walk South to Racławicka. Turn left (East) and walk 100m. Garden entrance is on the right.

Urbanforage
This is a guided walk through
the spontaneous and cultivated vegetation of Warsaw’s urbanscape. Along the walk, we learn to identify plants, hear their botanical histories, stories of their use by animals and humans, and share antidotes of specific experiences with these plants. ABOUT JODIE BALTAZAR
JODIE BALTAZAR works primarily in film and animation, but her artistic activities encompass numerous disciplines such as music and performance, craft, and environmental art. Her work explores how things in an environment, living and otherwise, affect and control each other. In 2011, she founded Pixxe, which attempts to transform public or neglected space into socially useful space, addressing issues like food production, the city/country divide, civil society, and the use of land. Jodie earned an MFA from the University of Southern California in 2008 and was awarded a Fulbright grant to Poland in 2010. In 2011, she received a CEC Artslink Project in 2011 to shoot an experimental documentary film about two rural Polish brothers struggling to adapt to new economic and ecological paradigms. Elderflower wine, part 2

Airlock on the elder

Winemaking is a long term project, so it will be quite some time before I know if it is any good or not. However, I recently entered stage 2 of the process — moving the wine out of buckets and into a demijohn. Here is how it went.

Experiment 1

(Soak flower without sugar, strain flowers, no added flavors). After soaking the flowers for four days, I added a camden tablet, then waited 24 hours, at which point I added the  yeast. The brix reading was 23. That is to say, 12 percent alcohol. I put it in the basement where the temperature was between 20 and 25C. I stirred it once in a while and checked the Brix reading once in a while. After about week the Brix was down to 8.5. I let it sit for three days without stirring. The Brix was down to 3.5. I then decanted it into a demijohn, topping it off with fresh water (boiled and cooled). Then on goes the airlock.

Experiment 2

(Soak flower with sugar, added flavors). On June 18, the fermentation began, however, I neglected to take a Brix reading, so I’m not sure what the starting alcohol level was, but by June 20 it was 20. By June 26, the Brix was down to 6.5 and I put it in a demijohn.

It was fun to test the Specific Gravity / Brix / Alcohol level and taste the stuff gradually becoming more alcoholic as the yeast worked its magic.

The bubbling slowed down and stopped around July 11 for Experiment 2 and about a week later for Experiment 1, so now I must simply sit and wait for the wine to clear. This could take months.

I have been doing a lot of experiments with Elderflowers, starting on May 27, when I made some Elderflower cordial for the wild food walk on the Warsaw Escarpment. My friends Wojtek and Aneta posted the recipe here in Polish and English. They made some with honey and mixed it with Krupnik. It was fantastic.

Now I’ve decided to make some wine and champagne before the flowers are gone, but it will be a long time before I know if it worked or not. I collected all the flowers from my neighborhood Rakowiec/Ochota and some close by in Mokotów.

Step 1 is to prepare the must. I’ve made two batches — one will be wine and one champagne.  In the first experiment I let the flowers soak for four days, and then added the rest of the stuff. In the second I mixed all the ingredients and let it soak. They don’t have the same ingredients.

Experiment 1

Day 1-4: Soak 500 ml of flowers, zest of 2 lemons in 4.5 l of boiled spring water
Day 5: Add campden tablet & wait 24 hours at room temperature
Day 6: Add 1 kg of sugar, juice of 2 lemons, 1 packet EC-1118 wine yeast
Put in the basement (20C). When wine is at BRIX 7 /SG 1.03, move to demijohn.

Experiment 2

Day 1: Soak 500 ml flowers with sugar, rind and juice of 2 lemons, 250 g white raisins, 4.5 l of hot boiled water with 1/2 cup of strong green tea and 1.3 kg of sugar
Day 2: add 1 tsp yeast nutrient and 1.25 tsp SN9 wine yeast
One day at room temperature, then move to basement (20C). When wine is at BRIX 7/SG 1.03, move to demijohn.

 

Kohlrabi from the boxes

Dum monj

Well it’s mid-June and a lot has been harvested already from the boxes. Mostly, lettuce and spinach. There is also a lot of kohlrabi (kalerepa). I made this great meal called Dum Monj with it. It’s uses the greens, which you can’t get unless you grow kohlrabi yourself, and asafoetida, which is a weird and delicious Indian spice. I must have made it four times this month already.
